Sushi pockets are a traditional dish calledInari Sushi in Japanese. It is said to have originated around 500 years ago when fried tofu, which was offered at the Inari Shrine, was stuffed with rice and made into sushi. Since there are several other origins, the shape and seasoning varies from region to region. In this article, we will introduce the most classic, Tokyo’s Inari Sushi.

  • 450g Rice
  • 2 tbsps Vinegar
  • 2tsps Sugars
  • 8 Fried bean curd
  • 4 tbsps Sugars
  • A little Salt
  • 2.5tbsps soy sauce
  • 2 tbsps Mirin

 If you have myoga-Japanese ginger, shiso leaves, or white sesame seeds, mix them in with the rice for a better taste. Please give it a try.

Step by Step Instructions

Step 1

Cut fried tofu in half and blanch in hot water.

Step 2

Put soy sauce, brown sugar, mirin(sweet sake), and water in a pot, and simmer fried tofu for 1 hour.

Step 3

If using a rice cooker, cook the rice in the cooking mode. If using a pot, let the rice cook over medium-low heat with the lid on for 10 minutes, then steam for 30 minutes.

  Step 4

Mix rice, vinegar, sugar, and salt. making “Sumeshi“.(Some people in Japan would add finely chopped myoga and shiso leaves, white sesame seeds)

Step 5

Stuff the fried tofu with the Sumeshi mixture and you’re done!


Recommended for sports people. Inari sushi is high in calories due to the use of rice and sugar. However, it is expected to provide carbohydrates and protein from the rice, and fat, calcium, and iron from the fried tofu.
